Preheat your oven to 356°F (180°C) and line two baking sheets with parchment paper.
Melt the dark chocolate, milk chocolate, and butter together in a microwave or using a double boiler. Stir well and set aside to cool slightly.
In a large mixing bowl, beat together the brown sugar, white sugar, and eggs with an electric mixer on high speed until the mixture is thick and pale, about 3 minutes.
Reduce the mixer speed to low and slowly blend in the melted chocolate mixture until fully combined.
Gently fold in the flour, cocoa powder, and salt using a spatula until the batter is smooth. Let the batter rest for 10 minutes at room temperature.
Drop rounded tablespoons of the mixture onto the prepared baking sheets, leaving space for spreading. Bake for 10 minutes until the edges are set but the center remains soft.
Allow the cookies to cool on the baking sheet for about 7 minutes before transferring them to a wire rack to cool completely.
