Ingredients

1x
  • • 2 cups old-fashioned oats
  • • 1/2 cup quinoa
  • • 1/4 cup chia seeds
  • • 3/4 cup creamy almond butter
  • • 1/4 cup honey
  • • 2 tbsp olive oil
  • • 3/4 tsp Kosher salt
  • • 3/4 cup pitted prunes, pureed (about 1/2 cup)
  • • 1/2 cup sliced almonds
  • • 2 oz dark chocolate, chopped (about 1/2 cup)

Instructions

1

Line a 9-by 13-inch baking pan with parchment, leaving an overhang. In a large bowl, combine oats, quinoa, and chia seeds.

2

In a small saucepan on low, heat almond butter, honey, oil, and 1/2 tsp salt until melted and smooth, stirring occasionally. Stir in pureed prunes. Pour almond butter mixture over oat mixture and stir to combine.

3

Fold in almonds, chocolate, and chopped prunes. With wet hands, spread the mixture onto a prepared baking pan to 1/4-inch thickness. Refrigerate until set, about 1 hour. Cut into 16 bars. Store in an airtight container in the fridge for up to 3 weeks.
