Place the pork roast in the slow cooker.

Sprinkle with salt, garlic, ground mustard, and adobo sauce. Pour over the enchilada sauce and Dr. Pepper. Evenly distribute 1/2 cup of brown sugar on top.

Cover and cook the pork on low for 10-12 hours or on high for 5-6 hours. Check if the meat shreds easily; if not, continue cooking until tender.

Shred the pork into larger chunks to prevent it from becoming mushy. Stir in an additional 1/2 to 1 cup of brown sugar based on your taste preference. Cover and cook for another 30 minutes.
