Pineapple Casserole

                Ingredients

                • 2 20 oz cans chunk pineapple, drained and keep juice
                • 6 tbsp pineapple juice
                • 6 tbsp self-rising flour
                • 1 cup sugar
                • 1 1/2 cups grated cheddar cheese
                • Topping 1 stick melted oleo
                • 1 pkg Ritz crackers

                Instructions

                1. Combine pineapple chunks, pineapple juice, self-rising flour, sugar, and cheddar cheese.
                2. Place mixture in a casserole dish.
                3. For topping, mix melted oleo and crushed Ritz crackers.
                4. Sprinkle topping over the pineapple mixture.
                5. Bake at 350°F for 30 minutes.
