Pineapple Casserole
A sweet and savory pineapple casserole with a crunchy cracker topping.

Ingredients
- 2 20 oz cans chunk pineapple, drained and keep juice
- 6 tbsp pineapple juice
- 6 tbsp self-rising flour
- 1 cup sugar
- 1 1/2 cups grated cheddar cheese
- Topping 1 stick melted oleo
- 1 pkg Ritz crackers
Instructions
- Combine pineapple chunks, pineapple juice, self-rising flour, sugar, and cheddar cheese.
- Place mixture in a casserole dish.
- For topping, mix melted oleo and crushed Ritz crackers.
- Sprinkle topping over the pineapple mixture.
- Bake at 350°F for 30 minutes.
