Ermine Frosting
Ermine Frosting, also known as Cooked Flour Frosting, is a delightfully airy and light concoction that falls between whipped and buttercream. Perfect for complementing various cake flavors, its subtly sweet taste enhances any dessert for a polished finish.

In a medium saucepan, whisk together the granulated sugar and all-purpose flour.
Gradually add the whole milk to the sugar-flour mixture, cooking over medium heat. Keep whisking constantly until it thickens to a pudding-like consistency, approximately 3 to 6 minutes.
Remove from heat and transfer the mixture into a stand mixer bowl equipped with a beater attachment. Beat on medium-high speed for 10 to 15 minutes until the mixture reaches 80°F.
Lower the speed to low. Gradually add the softened butter, a few tablespoons at a time, mixing each addition until smooth. Scrape down the bowl sides as necessary for uniform mixing.
After incorporating all the butter, add the vanilla extract. Increase the mixer speed to high and beat for another 4 to 6 minutes until the frosting is light and fluffy.
If the frosting is too firm or greasy, place the bowl over a steaming pot of water to soften. Re-whisk until smooth. If too loose, refrigerate for 15 to 20 minutes before re-whipping.
Use the frosting for topping cakes or cupcakes as desired.
