Carne Asada is a flavorful and aromatic dish made with marinated beef steak grilled to perfection. Perfect for tacos or as a main dish with sides like rice and salsa, this dish is rich in spices and brings a delightful taste of Mexico to your table.

Using a sharp knife, slice the steak across the grain into very thin strips. Add the steak to a large bowl.
In a separate bowl, add the olive oil, lime juice, lime zest, salt, cumin, smoked paprika, and chile powder. Whisk together.
Pour the marinade over the steak and mix with your hands. Cover and let sit in the fridge for 30 minutes or up to 6 hours.
Set a cast-iron over high heat. When ready to cook, add the shot of mezcal and mix it into the steak. Allow excess marinade to drip off the steak and evenly spread out on the cast iron.
Grill until the steak is well charred, then remove and set on a platter.
Melt cheese with the steak and add to fresh tortillas to make a quesadilla or serve with rice, salsa, or anything else your heart desires.
