Cinnamon Layer Bars with Vanilla Icing
Rich and buttery bars layered with a cinnamon-sugar filling and topped with a smooth vanilla icing. These bars are perfect for a cozy dessert or a sweet treat with your afternoon coffee.

Preheat your oven to 325°F (165°C) and grease an 8x8 inch baking dish.
In a large bowl, cream together 1 cup of butter and 1/2 cup brown sugar until light and fluffy. Add the egg and beat thoroughly.
Mix in 3/4 cup of powdered sugar, 2 teaspoons vanilla extract, a pinch of salt, and 1 teaspoon baking powder. Gradually incorporate the 2 1/2 cups of flour until everything is well combined.
Divide the dough in half. Press one half into the bottom of the prepared baking dish, smoothing it evenly with a spatula.
In a separate bowl, combine 1 cup of brown sugar, 1 tablespoon cinnamon, 2 teaspoons flour, and 3 tablespoons butter to create the filling. Mix until crumbly, then spread this over the base layer in the dish.
Spread the remaining dough over the filling, flattening it gently with a spatula.
Bake for about 35 minutes, or until the top is lightly golden. Remove from the oven and let it cool completely.
While the bars cool, prepare the icing by mixing 1 cup of powdered sugar, 2 teaspoons cinnamon, 1 teaspoon vanilla extract, and 4 tablespoons heavy cream until smooth and pourable.
Once the bars have cooled, spread the icing over the top evenly. Allow the icing to set before cutting into squares.
