Creamed Spinach-Stuffed Mushrooms

Large, meaty mushrooms stuffed with a savory blend of creamed spinach and breadcrumbs, perfect as an appetizer or side dish.

Preheat the oven to 400°F.

Heat butter in a large skillet.

Add the onion, garlic, paprika, coriander, cayenne, turmeric, and 1 teaspoon salt, cooking until onion is soft.

Add the spinach in batches, cooking until wilted.

Stir in the cream, Parmesan, bread crumbs, egg yolks, black pepper, and remaining 1/2 teaspoon salt.

Divide the mixture among mushrooms, sprinkle with cheddar cheese.

Drizzle with olive oil and bake until the mushrooms are soft and the cheese is browning, 12 to 15 minutes.
