Easy Muffins with Addons
An easy recipe for classic muffins that can be adapted with various optional variations to make veggie, whole wheat, cinnamon raisin or cheese muffins.

Preheat oven to 400 degrees F. Line 12 muffin cups with muffin liners or grease with oil or butter.

In a large bowl, combine oil, egg, milk, sugar and salt. Mix very well with a fork or wire whisk, then add baking powder and flour. Mix again until all of the dough is well moistened, but be careful to not over mix.

Spoon the batter into a dozen well oiled muffin cups. Bake for about 20 minutes.

Remove from the oven and cool slightly before removing from the pan.
