Creamy Cajun Chicken Pasta
A zesty Cajun-style pasta with creamy chicken, vegetables, and delightful spices.

1. Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10 minutes or according to package directions. Drain.
2. Heat oil in a large skillet over medium-high heat. Add bacon and cook, stirring, until crispy, about 4 minutes. Transfer to a paper towel-lined plate, leaving the bacon fat in the pan.
3. Add onion to the pan and cook, stirring, until softened, about 5 minutes. Add chicken, bell pepper, garlic, Cajun seasoning, and pepper. Cook, stirring occasionally, until the chicken is no longer pink inside, about 5 minutes.
4. Sprinkle flour over the chicken and vegetables while stirring. Add crushed tomatoes and bring to a simmer, scraping any browned bits from the bottom of the pan. Reduce heat to maintain a low simmer, cover, and cook until the sauce thickens, 5 to 7 minutes.
5. Stir in the cooked pasta and sour cream until combined. Adjust seasoning to taste.
6. Serve garnished with scallions.
