No-Bake Chocolate Oatmeal Cookies
Delicious and easy, these no-bake chocolate oatmeal cookies combine the rich flavors of cocoa and peanut butter. Perfect for a quick treat, these cookies set at room temperature or can be chilled in the fridge for faster results.

Line two baking sheets or the counter with parchment paper. Use parchment paper directly on the counter if desired.
In a medium saucepan, combine butter, sugar, cocoa powder, and milk.
Set over medium heat and cook, stirring frequently, until the mixture reaches a full boil.
Allow the mixture to boil for 60 seconds without stirring.
Remove from heat and immediately add vanilla, peanut butter, and quick oats.
Stir the mixture until well combined. Using a medium (2 Tbsp) cookie scoop or two spoons, drop portions onto the parchment paper.
Let rest at room temperature until set, about 20–30 minutes. To speed up setting, refrigerate.
