Caramel Peanut Popcorn Bars
These Caramel Peanut Popcorn Bars combine the classic flavors of caramel and peanuts with the light, airy texture of popcorn. Brush the bottom and sides of an 8x8-inch baking pan with a thin layer of melted butter. Line with parchment paper, leaving overhang on two sides.
Preheat the oven to 250°F (120°C).
Fill a glass with water, place a pastry brush inside, set it next to the stove.
In a large Dutch oven, combine sugar, butter, corn syrup, and 1/4 cup (4 oz / 113g) water and bring to a simmer over medium-high heat, stirring until sugar is dissolved.
Reduce heat to medium, continue cooking without stirring, and brush any caramel from the sides of the pot until caramel is medium golden brown.
Remove from heat, stir in salt and baking soda.
Add popcorn and peanuts to the Dutch oven, fold to coat evenly.
Transfer to oven and bake for 30 to 35 minutes, stirring every 10 minutes.
Remove from oven, place caramel corn mixture into prepared pan, press with greased hands into an even layer.
Let cool completely, then use parchment to lift out. Slice into 3-by-3 grid with a serrated knife to form 9 bars.
