Ingredients

1x
  • • 1/2 stick (1/4 cup) unsalted butter, plus more for buttering the pan and topping before baking
  • • 1 cup whole milk
  • • 2 tablespoons sugar
  • • 1 packet (2 1/4 teaspoons) active dry yeast
  • • 3 1/4 cups flour, more as needed
  • • 2 eggs
  • • 1 teaspoon fine sea salt
  • • 1/3 cup (1 ounce) finely grated Parmigiano-Reggiano cheese
  • • Extra flour for dusting
  • • Extra melted butter
  • • Extra grated Parmigiano-Reggiano cheese for sprinkling

Instructions

1

Melt 1/2 stick butter in a small bowl and allow to cool. Butter a 9x13 inch pan generously.

2

Warm 1 cup milk and 2 tablespoons of sugar in a small saucepan till just warm. Dissolve 1 packet yeast in this mixture and let stand till frothy.

3

Combine 3 1/4 cups of flour with 2 eggs, 1 teaspoon of sea salt, and the yeast mixture in a stand mixer with a dough hook attachment.

4

Knead on low speed till a sticky dough forms, adding one tablespoon of flour at a time if it's too sticky.

5

Let the dough rise in a warm place covered with a towel till doubled in size.

6

Form into 12 balls and place in the buttered pan. Let rise covered again till puffed up.

7

Preheat oven to 350 degrees Fahrenheit.

8

Bake until tops are puffy and golden, about 20-25 minutes.

9

Brush the warm rolls with melted butter and sprinkle with finely grated Parmigiano-Reggiano cheese.

10

Serve hot from oven.
