Line an 18 x 13-inch sheet pan with a silicone baking mat or cover it entirely with foil, ensuring that the foil extends up and over the sides of the pan. Break the matzo sheets as needed to fit the entire area, arranging the sheets on the prepared base.
Preheat the oven to 300°F.
Scatter the sesame seeds across a second sheet pan and toast in the oven for 7 to 10 minutes until golden brown, tossing halfway through. Set aside to cool.
In a large saucepan, combine the brown sugar, butter, honey, tahini, and 1/4 cup water. Bring to a boil over medium-high heat, stirring constantly. Once boiling, continue to cook, stirring and scraping, until reduced by half, large slow bubbles form, and it darkens in color. Remove from heat, add the sesame seeds and salt, and stir quickly to combine.
Immediately distribute the toffee mixture over the matzo, spreading it as evenly as possible.
Bake for 20 minutes until the toffee is deep golden brown and bubbles mostly subsided. Let the matzo cool completely, then peel off and break into pieces.
