Banana Cream Pie

Ingredients

- • 10-3/8 oz pie crust
- • 11-7/8 lbs milk, nonfat, dry
- • 1 gal and 1/2 qts water, warm
- • 3/4 oz salt
- • 1 lb sugar, granulated
- • 13-1/2 oz cornstarch
- • 2-7/8 lbs sugar, granulated
- • 1-3/4 qts water, cold
- • 1-1/8 lbs eggs, whole, frozen
- • 6-3/4 lbs banana, fresh, sliced
- • 2-1/3 lbs margarine
- • 2-1/8 oz extract, vanilla

Prepare and divide dough for pie crust.

Roll dough and place in pan.

Bake crust at 425 F for 10 minutes.

To make filling, reconstitute milk and heat with salt and sugar until hot.

Add margarine and vanilla to filling.

Stir hot mixture into cold water and cornstarch mixture.

Boil gently, then cool slightly.

Slice bananas and add to filling.

Pour filling into cooked pie shells.

Chill pies until set.
