Sambar Recipe
A traditional South Indian Sambar recipe involving a variety of spices, toor dal, and vegetables, perfect for serving with rice, idli, or dosa.

Boil a handful of toor dal until fully cooked and mash it.
In a cooking vessel, add 1 tablespoon of oil.
Add 1/2 teaspoon mustard seeds and let them crackle.
Add 1/2 teaspoon fenugreek seeds.
Add a few curry leaves.
Add 1/4 teaspoon hing and let it sizzle.
Add 2 to 3 dry red chilies and sauté.
Add chopped onion and tomatoes, and cook until soft.
Add the mashed toor dal to the cooking vessel.
Add 1 tablespoon tamarind juice.
Add 1 1/2 teaspoon chili powder.
Season with salt to taste.
Add water according to desired consistency (thick or diluted sambar).
Bring to a boil and let simmer on medium flame.
Garnish with chopped coriander leaves before serving.
