Beignets
Delicious homemade beignets, perfect for a sweet treat. Fluffy and covered in powdered sugar.

Ingredients
- 1/2 cup warm water
- 1/2 cup sugar
- 1 envelope yeast
- 2 eggs, slightly beaten
- 1 1/4 teaspoons salt
- 1 cup evaporated milk
- 1/2 cup shortening
- 7 cups flour (bread flour)
Instructions
- Soak yeast in warm water and sugar for 10 minutes.
- Mix eggs, salt, and evaporated milk. Add to yeast mixture.
- Melt shortening and whisk into the mixture.
- Knead dough and add flour gradually.
- Spray bowl with oil, add dough, cover, and let rise for 2 hours.
- Knead on floured surface and roll out 1/4 inch thick.
- Cut into 3 inch squares.
- Drop in hot oil, turning frequently until brown.
- Drain and shake in paper sack with powdered sugar.
