Beignets
Delicious homemade beignets, perfect for a sweet treat. Fluffy and covered in powdered sugar.

Soak yeast in warm water and sugar for 10 minutes.

Mix eggs, salt, and evaporated milk. Add to yeast mixture.

Melt shortening and whisk into the mixture.

Knead dough and add flour gradually.

Spray bowl with oil, add dough, cover, and let rise for 2 hours.

Knead on floured surface and roll out 1/4 inch thick.

Cut into 3 inch squares.

Drop in hot oil, turning frequently until brown.

Drain and shake in paper sack with powdered sugar.
